Lamb jerky is May not be something that comes to mind when one hears jerky, however this strongly flavored meat will actually make a delectable jerky. Lamb will be harder to trim than beef, however lamb flank steak is a perfect cut for making jerky and if very easy to use. Lamb will also stand up to a great variety of flavors, even some that one might not normally associate with jerky, such as mint and more fruity marinades. Lamb jerky is one area where the skills of a jerky maker can truly shine, as the results of some of the more diverse marinades can really surprise the palate.
