Italian Dressing Jerky Marinade
1/2 cup white or red wine vinegar
1/3 cup water
1/3 cup vegetable oil or olive oil
1/4 cup light corn syrup
2 1/2 tablespoons grated Romano cheese
2 tablespoons dry pectin
2 tablespoons beaten egg
1 1/4 teaspoon salt
1 teaspoon lemon juice
1/2 teaspoons minced fresh garlic
1/4 teaspoons dried parsley flakes
pinch of oregano
pinch of crushed red pepper flakes
Combine ingredients in a mixing bowl, mix, and let sit one hour before using, allowing flavors to blend.
Yes, this may seem an odd flavor for a jerky, but the basic Italian dressing actually makes a for a nice marinade for meats. You can either use the recipe above, make you own, or use the packets available at the grocery store.
Pairs well with: Venison (surprisingly so)
